Quick Meal ideas – Sausage Pesto with Rigatoni and a loaf of Garlic Bread

iStock_000010235073XSmallLooking for a quick and tasty meal, we’d just had chicken the night before (do you try to rotate your main dish selections?) and so wanted to do something different. I had a tub of pesto bought from our deli and decided to create something new. Or if you want to, make your own pesto so you have this recipe handy anytime – some great resources are here:

This is a quick meal you can have ready in minutes.
Ingredients
  • 2 Italian Sausages – casings removed
  • Pesto – from grocery store deli area or make/freeze your own
  • 1 clove garlic
  • 2 cups Rigatoni
  • Shredded Parmesan
  • 1 loaf of French Bread
  • 1 clove garlic
  • 4 Tbsp Margarine or butter
  • Garlic Salt
Instructions
  1. Remove the casings from two Italian sausages and then brown, add minced garlic until meat and garlic are brown. Pour in contents of pesto container and let cook down to desired consistency.
  2. Meanwhile cook pasta according to directions (we use a heap of water, some oil and a little salt). Toss pasta with sauce.
  3. Top with Parmesan cheese.
  4. Preheat oven to 350.
  5. Meanwhile slice the garlic bread in chunky pieces, but not completely down to the bottom. Mix butter and about a tsp of garlic salt. Mince garlic and toast in 1 TBSP olive oil. Put toasted minced garlic into the butter mixture. Take a dollop of the mixture and put it between each of the slices in the bread. Take a small remaining amount and spread over the top. Add additional garlic salt if desired. Wrap in foil.
  6. Put Garlic bread in while you’re cooking your noodles. Cook for 20 minutes at 350, then turn the oven up to 375, unwrap bread and give it 5 more minutes for a more crispy outside.
  7. Mix together for a yummy fast dinner.
