Fabulous fancy tomato soup and cheese sandwich

If your family is like ours, we LOVE tomato soup and cheese sandwiches for dinner or lunch! This past week I decided to soup it up! (ha ha, pun intended) and make the fancy kind! I did find a basic list of ingredients, but the recipes are all mine.

Creamy Tomato-Basil Soup

2 Tbsp Oil

1/2 minced onion

4 C. chicken Broth

2 cans fire roasted diced tomatoes

1/2 pint heavy cream

3/4 Cup chopped Fresh basil

1 TBSP Sugar

In hot oil saute minced onion until golden brown in a large saucepan.

Add 6 cups of chicken broth and the cans of fire roasted tomatoes and cook for about 1/2 an hour to 45 minutes – I used the hand blender to make it creamy and not chunky, but you can do what you like – creamy versus chunky is a preference! 🙂

Add cream and chopped basil and sugar to taste (we thought it was a bit tart). Cook for 15 mins on low.

Fancy Cheese Sandwiches

A loaf of nice bread – I used a sourdough

Fontina cheese

Mozzarella cheese

Basil leaves

Thin sliced tomato

Butter the bread and put one side in the pan – butter side down. Layer with the fontina cheese, basil leaves (large ones are great – it’s just like yummy smelling lettuce), mozzarella and thin sliced tomato.  Top with second piece of bread (butter side out). Toast on each side until golden brown and the cheese melts.

Serve together for an easy evening meal!
