I am a huge lover of creative leftover recipes and just as a teaser, I’m have a favorite risotto recipe I’ll share at the party – you can use leftover chicken, turkey or about any meat (and veggies) in this – it’s an awesome way to use up leftovers in a quick creative way! I also love the idea of minimizing waste – we use all our off-cuts from beef and chicken to make stock -it’s easy and cost effective! We just trim them and add them to a sealed plastic container we keep in the freezer. We collect enough to make stock and then make our own over a weekend.
