Cranberry Cream Cheese Spread

You’ve been invited to a knockout holiday party! Whether it’s a family holiday afternoon or evening, a friend’s ornament exchange, or the annual office party,etiquette tells you to offer to bring something. This year you don’t need to choke on your offer and secretly hope your host declines. You can put this no-cook, no-bake holiday cranberry cream cheese spread together in several minutes with a few ingredients.

People who like the tartness of cranberry find it is well-balanced with a bit of sweetness in the cream cheese. Plain or cracked pepper crackers work best with this spread, allowing the combination of flavors to take center stage and steal the show. Make it a day ahead whenever possible for best results.

Ingredients:

One 8-oz. brick cream cheese

Two cups fresh cranberries

¼ cup fresh cilantro leaves, chopped

Juice of one fresh lime

Four scallions, thinly sliced

Directions:

Using a food processor or blender, pulse one cup fresh cranberries until roughly chopped. Empty into a 2-cup container and repeat with remaining cranberries. Add chopped cilantro, lime juice, and scallions to container; stir to combine. Cover and refrigerate cranberry mixture four hours or overnight for best flavor.

Unwrap cream cheese and place centered on a serving plate; allow to soften at room temperature for about two hours. Remove cranberry mixture from refrigerator and stir lightly. Top the cream cheese with about half the cranberry mixture, allowing some to tumble over the sides onto the serving plate. Serve with assorted crackers. Top cream cheese with additional cranberry mixture as it gets low. 

Refrigerate leftovers.
