Fresh Berry Cobbler – Make It in Minutes

Plump, fresh berries pair flawlessly with summer. They are prime ingredients for luscious desserts, bursting with color and flavor. Whether you tote a basket and pick your own from the grove or select your favorites from the produce section of your grocery store, I guarantee you won’t feel guilty for putting together this delightful fruit cobbler in only a few minutes and spend more of your summer outside the kitchen!

Fresh Summer Fruit Cobbler with Crumb Topping

1 can prepared fruit pie filling

2 cups fresh small fruit* or fruit cubes**
¾ cup all-purpose flour

¼ cup quick-cook oats
½ cup white sugar

½ cup brown sugar
1 egg, beaten
5 tbsp. butter, melted (do not substitute with margarine)

A few shakes of cinnamon

Directions:

In a medium bowl, combine and gently mix fruit and pie filling; pour into an 8” or 9” pan at least 3” deep.

In a separate medium bowl toss flour, oats sugars, and beaten egg until it resembles coarse meal; cover fruit evenly.

Melt butter in a microwave-safe cup at half-power for one minute. If the butter is not completely melted re-heat at half-power in fifteen-second intervals. Drizzle melted butter evenly over top of cobbler, and shake a little cinnamon over the top.

Bake at 400°F for 30-35 minutes until topping is golden brown and fruit juice is bubbly. Serve warm or at room temperature with a scoop of vanilla ice cream or whipped topping, if desired. Cover and refrigerate leftovers.

*Small fruit could be blackberries, blueberries, raspberries, pitted cherries.

**Fruit cubes could be one-inch cubes of peaches, apricots, pears, or quartered strawberries.
