I just got back from hot and humid Missouri and returned to a snowstorm! Not to mention Coloradans have gone from 85 degrees to snow in just 48 hours! Yikes! I think we’re all feeling like spring!
The good news is that the warmer days of spring and summer are on the way, I felt it last week and I’m sure a lot of you did too!
When I got home I was dying to try some of my summer favorites and the first that came to mind was:
Banana pops!
I got this recipe from my Mother in Law who lives in Australia and it’s a wonderful way to satisfy a sweet tooth without adding any additional sweetener (a mom favorite!).
The ingredients are so simple:
1 Medium banana
1 tsp lemon
1/2 cup milk
3/4 cup of Vanilla Mountain High Yoghurt (you can also use plain or a one of the other available flavors – it would be fun to play around with it)
Put all of the ingredients in a blender or use a bar-mix and mix in a bowl. Pour into your favorite ice pop containers and freeze. My kids loved the little that was leftover for a smoothie too!
